Menu Planning Monday

Menu_plan_monday Well last week went so well planning my one meal, that I’m going to take a big leap of faith and actually plan three meals.  This will be difficult, because our oldest son begins his All-Star baseball tournament this week, and his games are 45 minutes away, and they begin at 5:00.  Better plan for a lot of sandwiches!

Monday: BBQ Chicken/Hashbrown casserole.  This recipe is on the back of the Simply Potatoes Hashbrowns, which I always get on sale for $2.00. It’s easy and delicious.

Tuesday: Definitely sandwich time at the Ballpark. My kids seem to have an aversion to sandwiches, but they enjoy it when I buy "Shreds" in the produce aisle and put it with their meat, on some kind of special bread, like a french roll or whole grain roll.

Wednesday: Pasta night  We like to have Angel Hair with a very light red sauce, fresh corn on the cob and a green salad.  Great for hot summer nights.

I did discover, that when I planned my menu last week, it left me a lot more time to write and play with my boys.  So, I am hoping planning more than one meal this week will free up even more time.

  1. Yea for you!!!! That’s the way to do it – start small, and eventually it will all come together.
    I know the routine all too well of baseball games at dinnertime. I feel ya! We used to do some kind of BBQ in the crock pot, and put it on hamburger rolls (the boys would gobble that up). Also, anything I put on sub-style rolls was always a hit.

  2. I’m new at menu planning too! And DO try the honey chicken kabobs – my family RAVED over them. (And it is truly rare when all 5 of us like the same thing) This time, I’m going to make twice as much and use the leftovers in either salads and/or sandwiches.

  7. Your menu looks great! Don’t stress so much about the menu plan. It’s only a plan – it’s not a commandment. As a matter-of-fact – we’re having hot dogs tonight -my husband requested them [he rarely gives me food ideas]. I saw that same recipe on the back of the shredded hash browns and thought it looked pretty good myself.

  9. I want to encourage you to keep plugging away at making weekly menus. I’ve been doing this off and on for many years and when I make the effort to make a meal plan, my week always goes *so* much smoother. πŸ™‚

  13. The BBQ Chicken Hashbrown recipe sounds wonderful, but, alas, they can’t be had in this house! Thanks for stopping by my “kitchen” – I do have a lot of spices, but that’s what happens when virtually everything has to be made from scratch.
    Btw, I really think I prefer planning 3-4 days at a time. I haven’t prepared a whole week’s menu as planned yet!
